Whisk together in large mixing bowl:
3 c flour
1 c sugar
1 T cinnamon (adjust according to taste)
4 tsps baking powder
½ tsp salt
Whisk together in 2-c measuring cup:
⅔ c vegetable oil
2 eggs
milk to bring to 1¾ c (2 c if using fresh blueberries in step below)
Blend dry and liquid to make a thick batter, then..
Fold in:
Fill:
12-muffin tin that has been sprayed with Pam to the very tops of each opening; batter will rise, but not overflow
Sprinkle liberally with:
Wheat Germ
Bake for 20-25 minutes in pre-heated 400-degree oven.
