It simply does not get easier than this derivative of "DelishDish", posted in January. Remove skin from chicken breasts, leaving rib bones in place. Use kitchen shears to further remove any remaining fat. Rinse and place, bone side down, in pan (I like to use aluminum, leaving me the option to it put on the grill). Coat meaty tops with about a teaspoon of dijon mustard, per piece; cover with crushed cereal crumbs - I used Special K, today. Sprinkle liberally with paprika, ground pepper and garlic powder. Spray with your favorite EVOO or Pam. Right before tossing in the oven or on the grill (in pans), squeeze on fresh lemon juice. Bake at 350 degrees, preheated, for about forty-five minutes or less, depending on size of breasts. Cook extra; succulent results are delicious for sandwiches or on salads.
