Yesterday's tart crust left me with just enough dough to spread to wafer thinness in a small pan, yielding the base for today's quiche. For this one, I pre-nuked a white onion, spinach and asparagus... piled it in and added two crumbled wedges of Laughing Cow Light and four large eggs, well beaten. Thinly sliced tomatoes, oregano, pepper, panko crumbs and a spritz of cooking spray went atop the whole shebang. Fifty minutes in a preheated 375-degree oven and voilà. What a treat, at the end of a busy day. Joe and I had different dinners, tonight; he's not a quiche guy. Smile.
