Fool 'Em Fish

A different presentation can turn often-used ingredients into a "new" dish. For a change, I cubed 2 partially frozen, 6-oz. halibut steaks and combined with 10 medium, cut-up shrimp. Then, I tossed with a Cuisinart blend of sun-dried tomatoes, ciabatta, parsley, oregano, pepper, garlic powder and EVOO.

After spreading in a shallow layer in a Pam-sprayed oven dish, I squeezed on fresh lemon juice. You want this to cook fast in a hot oven, so that crumbs all brown and fish is not overcooked. About 20 minutes at 400 worked well, for me.

Red jasmine rice made a nice accompaniment, as did a tossed salad. Buon Appetito.
