After consuming one section of my personal pie, it occurred to me that I must share this adaptation. Have you purchased those Cedar's Wraps yet? Only 80 relatively-nutritious calories in a whole one and absolutely delicious.
While you're heating a wrap right on the middle grate in a 325-degree oven, mix together last night's leftover spaghetti squash and chopped spinach-scallions (or whatever) with a healthy dollop of your favorite hummus. Remove slightly toasted wrap from oven; spread mixture on top; add a tad of mozzarella or your fave; pop back onto that oven grate and bake a few, or till cheese melts. Lord-y. How can such a healthy combo taste so danged good and contain only 225 calories?
Buon Appetito.
