Delish Dish

Boil together peeled potatoes, carrots and garlic, till all are soft; drain. Mash with a dollop of fat-free plain yogurt (Greek is the best), a light dose of Smart Balance Light margarine and freshly ground pepper. Pile into oven-safe pan, sprayed with Pam. Top with roughly grated Parmesan or Pecorino Romano, a sprinkling of paprika and scissor-cut garden chives. Can be prepared ahead and popped into oven at dinner time to heat.
