Liposuction Chicken

For part of Sunday's Super Bowl fare, we decided on somewhat nutritious chicken thighs, instead of wings. Just pretend, if you really like the latter, and prepare poultry, as follows:

Remove all skin and trim away the fat lurking underneath... carefully, with kitchen shears... every last bit. Then, push meat down on the bones, creating little "handles". Compress meat to bone, as much as possible. Dunk each piece in milk and then roll in unseasoned bread or cereal crumbs; place on foil-lined pans to freeze, raw. When solid, transfer to baggies and return to freezer. Remove as needed. Finish by seasoning and spraying with EVOO (no need to thaw). Bake in preheated 350-degree oven for about an hour. Barbecue sauce is an option.
