Let's Talk Turkey-For-Two

We're on a real fresh turkey kick... we love it, even when there's no one here but us chickens. They are impossible to find with no additives; even Shady Brook has resorted to adding a small amount of salt. Still, it's the least of the offenders, and we were happy to score this one. A 12-pound bird-for-two flies a long way, if you use this technique:

Right in your sanitized kitchen sink, for no mess and simultaneous washing, remove the drumsticks and set them aside with neck and giblets - package one for freezer and a pot of soup, at some later date. Then, break/cut the back with thighs, wash and set aside - package two for freezer and Joe's favorite dark-meat dinner, on another night; I'll have fish. Pop the remaining breast with wings into the oven with veggies spread around it and a couple of baking potatoes.... dinner, lunch, more lunch and another pot of soup, tomorrow. 

Don't try this with a thawed bird... poultry should be frozen only once. Buon Appetito.
