Jack O' Cooked

Y'all met Jack O' on Fright Night, when he reigned supreme. We'll appreciate him even further, as many dishes are enhanced by nutritious fresh pumpkin. Sure, we had this discussion, last year. But this guy was huge, resulting in my choice of a quick and easy method of cooking. Pictured are half the yield... 
Don't forget the equally-nutritious seeds. Just toss them around the chunks, spray everything with EVOO, season to your preference and bake the whole shebang at 325º for at least an hour... or till the house smells unbearably delicious.

Freeze in reasonable portions to use in pancakes, muffins, soups, sauces, sides, etc. For pie, I prefer small sugar pumpkins, or pure canned.
